Lentil Patties vegan with Yogurt Dip

What you need for the patties:

It couldn’t be simpler: only 2 main ingredients, which you certainly already have at home!

Lentils: whether brown, green or red – the recipe works with any type of lentils. They are simply softened in enough water and then serve as the main ingredient for the patties.
Lentils are very healthy, ideal for the vegan nutrition and rich in vitamins and minerals. Especially if you are trying to incorporate more plant based protein into your meals, lentils are perfect.

Flour: can decide which flour you prefer to use. I used whole meal flour to make the patties as wholesome and satiating as possible.

Spices: Salt, pepper, a little spiciness, paprika powder, …fit perfectly into the patties. Fresh herbs such as parsley, chives or basil give it all a delicious taste.

How to serve lentil patties:

  • as finger food with a dip
  • elegantly stacked
  • in a burger (check out this recipe for homemade, butter-soft burger buns)
  • on a fresh salad
  • with a splash of lemon juice

3-minute yoghurt sauce

Refreshing herbs in delicious a yogurt sauce – prepared in just a few minutes. Yogurt sauce is not only perfect for patties, but also in burgers, as salad dressing etc.

For this you will need: unsweetened yogurt, lemon juice, salt, pepper, maybe some tabasco for the spiciness, chopped herbs. Simply mix everything in a bowl, taste and season to taste. And done!

How long do the patties stay fresh?

Keep the fried lentils in the fridge for at least 3-4 days. It is best to put them in an airtight container after they are crispy fried and completely cooled.

Can I freeze the lentil patties?

The patties are very good to freeze. They can be stored in the freezer for a few months. As soon as you want to use it, put it in the fridge a day early and let it thaw slowly.

Ingredients

  • 200 g lentils not cooked
  • 60 g whole meal flour
  • rape seed oil for frying

Herbs & spices

  • salt and pepper
  • siracha sauce or tabasco for some spice
  • ½ tsp paprika powder
  • 1 tbsp soy sauce
  • ¼ tsp curcuma
  • ½ tsp garlic powder or a garlic clove
  • freshy chopped herbs

3-minute yoghurt sauce

  • 100 g unsweetened yogurt
  • salt, pepper, tabasco
  • juice of half a lemon
  • 1 tbsp freshly chopped herbs like basil, parsley or chives

Instructions

  • Place the lentils in a pot with 700 ml of water and cook for about 25 minutes until they are very soft. The cooking water should then be completely evaporated, otherwise you can remove or add something to the pot anytime. (Don’t salt the cooking water!)
  • Place the softly cooked lentils in a bowl, let them cool slightly and mix with the flour. Now add all the spices and herbs and crush and mix the mixture with a fork. Some lentils should remain intact, others can be crushed.
  • As soon as the mixture holds together and is slightly sticky, form 7-8 balls with slightly wet hands and then press them into frying pieces.
  • Fry the patties in a frying pan over medium heat with rape seed oil for about 3 minutes per side.
  • For the yogurt sauce, mix all ingredients well and serve it with the warm patties warm (or freeze them for later).
