Vegan Jackfruit Goulash Recipe

This hearty, tangy goulash tastes like the classic and convinces everyone! The main ingredient is jackfruit, a healthy meat alternative served with a creamy sauce.

Goulash originally comes from Hungary and is now popular all over the world! Whether with rice, creamy polenta, as goulash soup, with dumplings, noodles or just a piece of bread to dip the sauce!

The so-called UMAMI flavor is also found in this vegan goulash, which makes it taste deceptively real!

Vegan goulash, beef stew in vegan, sounds pretty unrealistic. But that’s where jackfruit comes in. This fruit has the same consistency as delicate, fibrous meat and thanks to the many spices and the creamy sauce it tastes wonderfully hearty and aromatic.

And the best? The recipe is very simple, suitable for beginners of vegan cuisine and prepared in just 30 minutes.

What is jackfruit?

As the name suggests, jackfruit is a fruit. It is wide spread in Asia and it tastes sweet when ripe, like a mixture of pineapple and banana. The large trees of the fruit grow wild between mango and banana trees. The fruits grow directly on the tree trunk and can weigh up to 40kg.

When you pick the unripe, young fruits, they have a subtle, fruity taste and can be spiced as you like. The fibrous texture is perfect as a substitute for stew and soft meat. Jackfruit is very healthy and can be used in a variety of ways, such as a filling for wraps and burgers or as meatballs and curries.

Where to buy jackfruit?

The young, unripe fruit that is necessary for this recipe can be found in organic shops or very well-stocked supermarkets. The fruit is cut into pieces and sold in jars or cans. If you can’t find them in your hometown, it’s probably easiest to order them online.

Vegan Jackfruit Goulash

Ingredients

  • 1 glass or jar jackfruit
  • 2 tbsp flour
  • 2 tbsp oil for frying
  • ½ onion diced
  • 1 tbsp tomato paste
  • ½ tbsp paprika powder
  • 60 ml vegan white wine
  • 1 liter vegetable stock or water
  • pepper and salt
  • ½ garlic clove diced
  • marjoram

Instructions

  • Cut the jackfruit into cubes. Then place the flour with some salt and pepper on a plate and roll the jackfruit in the flour.
  • Heat the oil in a saucepan, fry the jackfruit pieces for 5 minutes (until they are nicely brown) and remove them from the saucepan.
  • Lightly roast the chopped onion in the same saucepan, add the tomato paste and paprika powder and roast.
  • Dissolve with a little white wine, let the liquid thicken up a little and then pour in the vegetable stock. Add the jackfruit to the pot and simmer slightly for 15 minutes.
  • At the end add the garlic and marjoram and season the goulash with salt and pepper. If you want, you can pull the jackfruit pieces slightly apart with two forks. If you want the sauce a little thicker, you can bind it with starch (stir the starch in cold water and add it to the boiling goulash).
  • Serve the goulash warm with the desired side dish.
  • Tip: for an even creamier goulash add 50ml vegan cream at the end.
