Spinach Tortillas | easy & homemade

Vegan tortillas with healthy spinach and protein-packed peas made with just 5 ingredients. Easy to prepare and perfect with any filling.

Why you should try this recipe:

  • made from a few and very simple ingredients
  • contains healthy spinach and protein-rich peas
  • easier than you think – even for beginners
  • serve the tortillas with any filling or as an add-on to many dishes
  • an absolute eye-catcher due to the strong colour
  • a delicious alternative to the classic flatbread and tortillas
  • vegan, lactose-free

Meals to make with the tortillas:

  • Wraps are randomly filled tortillas. There are many variations and fillings that can be used, such as pumpkin hummus, lentils, lettuce, fried vegetables or vegan cheese.
  • Burritos – a Mexican classic with hearty fillings. The tortilla is filled in the middle with kidney beans, corn, tomatoes, lettuce, rice and herbs such as coriander and then closed and rolled up. Of course, hot sauces can not be missing.
  • Tacos – this fast food dish comes from Mexico too. The tortillas are baked in the oven to make them slightly crispy & crunchy. The crispy boats are filled with fresh ingredients of the Mexican cuisine.
  • Piadina is a name for thin flat bread from Italy. Here, half the tortilla is filled (mostly with ham and cheese) and then the other half is folded over. I like to fill the piadina with smoked tofu, vegan cheese or vegetables and salad.
  • Side dish to serve with a warm curry, a soup, or my absolute favorite: vegan chili sin carne. You can fill tortillas with it or dip them in it, an absolute dream.
  • Bread substitute – when you’re bored from classic bread.

Variations

In addition to the classic wheat tortillas made with only 4 ingredients, there are many other variations for the quick and easy flatbread. If you want to make your tortillas more exciting, you can mix different ingredients like tomato paste, spinach, fresh herbs or spices like turmeric into the batter for flavor and color. Some ideas and recipes:

Classic tortillas made of only 4 ingredients, easy and homemade.

Tomato tortillas: red appealing colour, exciting taste, light paprika note.

Herb tortillas: Simply add 2 tablespoons of fresh or dried herbs of your choice to the dough.

Spinach Tortillas – easy and homemade

Servings: 4 big to 12 small tortillas
Author: Lena

Ingredients

  • 450 g wheat flour
  • 220 ml water
  • 180 g peas frozen or from a can
  • 40 g spinach fresh or frozen
  • ¼ tsp salt
  • 1 tbsp sunflower seed oil

Instructions

  • If the peas and spinach are frozen, freeze them up in the microwave or at room temperature. If the spinach is fresh, cook it in boiling water for 1 minute.
  • Put the peas, spinach and water in a blender and blend well so that there are no pieces left and the mixture is quite liquid.
  • Mix the flour, oil, salt and pea-spinach mixture first in a bowl with a spoon. Then transfer the dough to the work surface. Knead the dough well for 5-10 minutes so that it becomes tender and soft.
  • Divide the dough into 4 equal parts (or 8-12 parts if you want the tortillas to be small) and roll them into small balls. Take a ball, flatten it slightly with your hand and roll it out with a rolling pin into a round and flat disc, about 1 mm thick. At this stage you should not add any flour, work on a clean and unfloured work surface.
  • Heat a pan on the stove over medium heat without grease or oil. Put a tortilla in the pan and let it bake. After about 2 minutes, the tortilla should form bubbles. Then you can flip them over and bake on the other side for another 1 minute. Make sure the pan doesn't get too hot or the flatbread will burn.
  • Serve the tortillas still warm, e. g. filled with vegetables or as a side dish to curry (more serving suggestions can be found above). If the tortillas get too cold, they won't bend anymore, they will break.

Serve the tortillas with:

Vegan Chili sin carne

Healthy beetroot – red wine dip with white sesame
