Gingerbread Porridge with cherry sauce

Creamy, vegan oatmeal with wintery spices and warming cherry sauce. Simple, quick recipe for a healthy breakfast.

Ingredients

  • 50 g (1 cup) rolled oats
  • 125 ml (1cup) plantbased milk
  • 125 ml (1 cup) water
  • 1 tsp cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp ground ginger or freshly grated ginger
  • a pinch of ground nutmeg
  • 2 tbsp agave syrup or maple syrup

Cherry sauce

  • 100 g frozen cherries or berries
  • 50 g agave syrup or maple syrup
  • 1 tbsp starch
  • orange zest
  • 1 star anise

Instructions

  • Put all the ingredients for the porridge in a saucepan and let simmer for 5 minutes stirring constantly.
  • For the cherry sauce, heat the cherries in a pot with the agave syrup, star anise and orange zest to make a liquid sauce. Mix the starch with 2 tbsp cold water in a bowl and then whisk it under the cherry sauce. This makes the sauce creamier.
  • Serve the oatmeal with the hot cherry sauce and hazelnuts or store it in the fridge for several days.
