Pumpkin Porridge with figs

The healthy breakfast for a cold autumn morning. Quickly prepared, vegan and delicious!

Ingredients

  • 100 g rolled oats
  • 250 ml plantbased milk
  • 250 ml water
  • 150 g pumpkin puree
  • 1 tsp cinnamon
  • ginger and clove powder to taste
  • 4 tbsp maple or agave syrup or another sweetener
  • 2 figs cut into round slices
  • pumpkin seeds and walnuts

Instructions

  • Add the rolled oats to a saucepan together with plantbased milk, water and pumpkin purée and simmer the oatmeal while stirring continuously for 5 minutes on medium heat. The porridge should not stick to the pan.
  • Add agave syrup, cinnamon, ginger and clove powder to the porridge and let it simmer until it becomes creamy and sticky.
  • Put the fig slices into your glass or bowl and add the pumpkin porridge. Garnish with pumpkin seeds and walnuts. Enjoy the healthy breakfast now or store it in the fridge for up to 3 days.
