Bundt cake is one of my absolute favourite forms for quickly prepared cakes. This shape is simply perfect for any afternoon cake (or also for breakfast) combined with a cup of tea or coffee. The absolute highlight of the bundt cake with white chocolate is the bright red icing that slowly runs down the grooves of the cake. An absolutely spectacular moment that makes your mouth water.

White chocolate

I like white chocolate very much because it is a perfect alternative to classic chocolate and it has a very unique and unforgettable taste. Unlike dark chocolate, it is not made from the entire cocoa mass, but only from cocoa butter mixed with milk and sugar. White chocolate is a little more demanding to process because it is harder. But don’t worry, in this recipe this just means that it takes a little longer than usual to melt.

Pomegranate

The pomegranate is an exotic fruit from the warm countries of the Mediterranean and Asia, it is also called the winter vitamin bomb. Its taste combines a slight sweetness with a fresh acidity, which gives the fruit its special aroma. Due to their varied taste, pomegranate seeds are used in sweet, but also in salty dishes. The easiest way to separate the seeds from the casing is to cut the fruit vertically along its seams and pick out the seeds from the white inner skins.

How to make pomegranate juice fast & easy yourself

Simply place the pomegranate seeds in a freezer bag, close it tightly and break them lightly with a heavy item to squeeze the juice out of the seeds. As soon as no more juice escapes, take the freezer bag and pour the juice from the bag into a container while holding the seeds in the bag with one hand.

Ingredients

  • 3 egg whites
  • 130 g white chocolate
  • 120 g butter soft
  • 80 g sugar
  • 1 package vanilla sugar
  • 300 g plain yogurt
  • 350 g flour
  • 2 tbsp baking powder
  • 200 ml milk
  • 50 ml pomegranate juice if you want to make it yourself, see some tipps above
  • 150 g powdered sugar

Instructions

  • Preheat the oven to 180 degrees Celsius or 356 degrees Fahrenheit.
  • Beat the egg whites with some sugar until it forms a firm snow.
  • Melt the white chocolate in a water bath (it takes longer than dark chocolate) and then let it cool down.
  • Mix together the soft butter, sugar and vanilla sugar until creamy and then add the milk and the yogurt.
  • Add the molten white chocolate and fold in the egg snow carefully. At the end mix flour and baking powder and add it to the mixture.
  • Grease the baking tray with enough butter to prevent sticking of the cake on the form. Then fill the mass into the form and bake it in the oven for 40 minutes, until it's fluffy and moist.
  • For the glaze mix the pomegranate juice with the powdered sugar and pour it over the cake.
