Vegan banana cake

A simple and quickly prepared cake made from a base of sweet bananas, vegetable  milk, wheat flour, crunchy coconut flakes and a sweetener of choice! All you need  is a bowl where you simply mix all the ingredients together and stir them well to  a smooth dough. Then you can put the cake mixture into any shape you like: on a  bakingtray, in a bundt pan or in a tall mould to make a banana bread.

Tahini cream

Tahini is probably one of the favourite ingredients for sweet, but also salty dishes  for almost all vegans. This nut butter consists of 100% sesame seeds, which have  simply been mixed for so long that they form a creamy paste. Tahini is well known  to most people because it is added to hummus. 
Some people simply don’t like tahini because of its unique taste, in this case  you  can use another nut paste for this recipe, such as almond or cashew butter. A banana-coconut cake with an almond sauce doesn’t sound bad either!

Aquafaba

Aquafaba is the dripping water of canned chickpeas. May this sounds absurd to you  for a moment, because you often simply threw this water away; but if it is so simple  and easy to use, why not use this”miracle water”; instead of throwing it away?!
With this Aquafaba you can completely replace whipped egg white in the vegan  kitchen. And even if you can hardly believe it at the moment, the mass resembles the   beaten egg white perfect without any difference! 
In this recipe the tahini is mixed with whipped aquafaba and a little sugar to make  a creamy and aromatic sauce.

Recipe for fresh banana bars with coconut flakes and a creamy tahini sauce, and you need only one bowl for the preparation!

Ingredients

  • 2 big bananas mashed or mixed with the milk
  • 150 ml plantbased milk I used coconut milk
  • ½ tsp salt
  • 125 g flour
  • 1 tbsp natron
  • 1 tbsp vinegar
  • 100 g coconut flakes
  • 1 package baking powder

Tahini cream:

  • 160 g Aquafaba
  • 100 g sugar
  • 3 tbsp tahini

Instructions

  • For the cake whisk together all the ingredients and fill them into a mould of your choice, then bake them for 25 minutes at 180 degrees Celsius.
  • For the tahini cream beat the aquafaba and the sugar until it forms a stabile foam, then fold in the tahini carefully just as long as it becomes homogen.
  • Serve the cake with the tahini cream and some coconut flakes.
