Bought protein bars are often full of additives, sugar and they’re also expensive. So why not just make the protein boosters yourself at home to know exactly what they contain?
In this recipe the little bars are also vegan and super delicious. The fruity raspberries go perfectly with the dark chocolate and the soft, almost creamy bars!

Ingredients

Oatmeal flour

Oatmeal flour is very popular as a healthy alternative to white flour. And fortunately for us, you don’t have to buy this overprized flour, but you can prepare it easily and in a few seconds even at home with the classic oat flakes. To do this, simply mix the flakes in a mixer until a fine flour is produced.
Oat flakes and therefore also their flour is very healthy, as it contains a lot of nutrients. Among them are many dietary fibres, minerals (especially magnesium, phosphorus, iron, zinc) and vitamins that provide plantbased iron.

Chickpeas

I chose chickpeas as the main source of protein for this recipe because on the one hand they are quite tasteless and can be easily processed into a creamy paste. On the other hand, chickpeas are packed with proteins, iron and calcium, and are therefore similar to animal proteins.
And if you think that the taste of chickpeas doesn’t fit into a sweet treat, try the recipe and let the opposite convince you!

Raspberries

The fruity raspberry filling makes the protein bars really tasty and delicious. You can use raspberry jam or fresh / frozen raspberries. I have a few raspberry bushes at home and in spring and summer these raspberries are picked and then frozen to have a berry stock for the winter!

Dark chocolate

Before you think chocolate on protein bars is out of place and makes everything unhealthy, you should know that a little chocolate a day (preferably dark chocolate with a high cocoa content) is actually healthy!
In an Italian study, it was found that 6. 7 grams per day are optimal and have a positive effect thanks to the cocoa. That would be about one or two pieces or a delicious chocolate coating on your bars. So enjoy the bars without a guilty conscience!

Vegan bars made of plantbased protein without white flour and sugar, with a fruity raspberry filling and crispy dark chocolate .

Ingredients

  • 250 g chickpeas from the can or boiled
  • 110 ml coconut milk
  • 50 g oatmeal flour oatmeal flakes mixed in a blender until they become a flour
  • sweetener or 5 dates
  • 100 g hazelnuts or other nuts finely ground
  • 200 g raspberries fresh or frozen, alternatively rasperry jam
  • 100 g dark chocolate or more if you want

Instructions

  • Put the cooked chickpeas, coconut milk, oatmeal, sweetener or dates, ground hazelnuts in a strong mixer and blend to a creamy paste without lumps.
  • Place the mixture on a baking paper to form a rectangle (approx. 25x20cm) with a thickness of 1 cm and cut into eight pieces. Freeze in this form for at least 30 minutes.
  • Boil up the raspberries with a little water and, if desired, sweetener or honey to make a kind of raspberry jam. Spread the jam evenly on the protein mass and freeze for another 30 minutes.
  • Separate the still frozen bars from each other and thinly coat them with the dark chocolate or dip into it.
  • the bars can be eaten as a cold snack lightly frozen or defrosted and eaten as a creamy  soft snack. Store in the refrigerator.
