Vegan protein bars with raspberries and chocolate
Vegan bars made of plantbased protein without white flour and sugar, with a fruity raspberry filling and crispy dark chocolate .

- 250 g chickpeas from the can or boiled
- 110 ml coconut milk
- 50 g oatmeal flour oatmeal flakes mixed in a blender until they become a flour
- sweetener or 5 dates
- 100 g hazelnuts or other nuts finely ground
- 200 g raspberries fresh or frozen, alternatively rasperry jam
- 100 g dark chocolate or more if you want
Put the cooked chickpeas, coconut milk, oatmeal, sweetener or dates, ground hazelnuts in a strong mixer and blend to a creamy paste without lumps.
Place the mixture on a baking paper to form a rectangle (approx. 25x20cm) with a thickness of 1 cm and cut into eight pieces. Freeze in this form for at least 30 minutes.
Boil up the raspberries with a little water and, if desired, sweetener or honey to make a kind of raspberry jam. Spread the jam evenly on the protein mass and freeze for another 30 minutes.
Separate the still frozen bars from each other and thinly coat them with the dark chocolate or dip into it.
the bars can be eaten as a cold snack lightly frozen or defrosted and eaten as a creamy soft snack. Store in the refrigerator.
