Vegan Apple Strudel that everyone loves

3-2-1 shortcrust

Shortcrust is a firm dough that is kneaded during preparation and is very compact. After baking it becomes soft and delicate, but also slightly crispy. It actually needs only 3 ingredients, good kneading and some cooling time for the classic shortcrust. It consists of 3 parts flour, 2 parts vegan butter / margarine and 1 part sugar. The ratio always remains the same and is easy to remember: 3-2-1.

How to make the best shortcrust

To make the dough a little more aromatic, some other ingredients are added to the dough: baking powder to let the dough rise easily, vanilla sugar for a fine vanilla aroma, lemon zest and salt to compensate the sugar and fat in the dough. All ingredients are then kneaded well, but it is important that the margarine is warm and able combine well with the other ingredients. If the dough doesn’t stick together, add a tablespoon of cold water. After about 5 minutes kneading a soft dough is formed. Then the dough only needs to rest in the fridge and can then be rolled out.

Fruity, juicy apple filling

The apple filling is the highlight of the strudel and makes the pastry irresistible. It’s juicy, light, refreshing and reminds me of freshly baked apples. However, the filling is not only made of apples, but has much more to offer.

Ingredients for the apple filling:

  • Apples: you can use any kind of apple, but I usually use slightly sweet apples like Golden Delicious, because then I don’t have to add any extra sugar to the filling. I normally use the apples that have been sitting around my house for a while and aren’t crisp enough to eat raw.
  • Almonds or pinoli: the chopped nuts provide the crunchiness in the filling. Traditionally pinoli nuts are used for this, but they are quite expensive and not always easy to find, so you can also use other nuts like almonds.
  • Cinnamon: the aromatic and wintry spice probably goes best with apples.
  • brown rum: it provides an exciting taste, the alcohol evaporates during baking.
  • Raisins: the dried grapes traditionally also belong in the apple strudel. If you or your family/friends don’t like them, you can leave them out.
  • Lemon juice: provides a freshness and slight acidity to the sweet filling.
  • Breadcrumbs: they ensure that the juice from the apples does not trickle out of the strudel. The bread crumbs soak up the juice, ensuring that the filling stays juicy and moist. If you have very juicy apples, you may want to mix a little more bread crumbs into the filling.

Ingredients

Shortcrust:

  • 300 g flour
  • 200 g vegan butter or margarine at room temperature
  • 100 g powdered sugar
  • 1 pinch of lemon zest
  • 1 pinch of salt
  • 1 tbsp baking powder
  • 1 tbsp vanilla sugar
  • 1 tbsp cold water or more

Apple filling:

  • 600 g apples / 4 big apples (I always use sweet apples like Golden Delicious)
  • juice of ½ a lemon
  • 100 g pinoli, almonds or other nuts chopped
  • ½ tbsp cinnamon
  • 2 tbsp brown rum alternatively apple juice
  • 40 g raisins
  • 30 g bread crumbs

Instructions

Shortcrust

  • Mix all the ingredients for the dough together and start kneading. At first, the dough doesn't seem to bind at all, but after 5 minutes, a soft dough forms. If it still doesn't stick properly, add more cold water and continue kneading.
  • Form the dough into a ball and wrap it in cling film. Now it needs to rest in the fridge for at least an hour.

Apple filling

  • In the meantime, prepare the filling: peel, core and quarter the apples. Take a quarter and divide it again lengthwise, then you can cut thin leaves from it. Put all the apple pieces in a bowl and immediately add the lemon juice so they don't turn brown. Then mix all the other ingredients into the filling.
  • If you used acidic apples, try the filling and decide if you want to add some sugar. If you used very juicy apples, add a little more breadcrumbs to the filling.
  • Place a baking paper on your worktop and flour it well. After the cooling time, remove the dough from the foil and place it on the paper. Roll out the dough into a rectangle measuring 45 x 30 cm. If the dough sticks to the baking paper, sprinkle some flour over it.
  • Preheat the oven to 180 degrees Celsius or 356 degrees Fahrenheit.

Assemble

  • Turn the dough rectangle in front of you so that the short sides are on the side from your point of view and the long sides of the rectangle are up and down. Fill the dough in the middle with the apple filling and leave free space on all sides (at least 8 cm). Now fold the dough from the right and left side into the middle. Then take the bottom dough and flip it in the middle by helping yourself with the baking paper. Then you can also fold the top dough in the middle using the baking paper.
  • Slightly press the dough at all ends together so that there are no more holes. If you have some dough left, you can decorate the strudelnwith it. For a golden yellow color, mix 1 tbsp of vegan milk with 1 tbsp of powdered sugar and coat the dough with it.
  • Bake the strudel in the oven for 40 minutes. Let the apple strudel cool down a bit and enjoy it warm (preferably with a creamy vanilla sauce).
