Vegan Apple Strudel

Buttery shortcrust with fruity, juicy apple filling – easy to make and the whole family will love it! Enjoy the apple strudel with vanilla sauce as a dessert or as a delicious breakfast!

Ingredients

Shortcrust:

  • 300 g flour
  • 200 g vegan butter or margarine at room temperature
  • 100 g powdered sugar
  • 1 pinch of lemon zest
  • 1 pinch of salt
  • 1 tbsp baking powder
  • 1 tbsp vanilla sugar
  • 1 tbsp cold water or more

Apple filling:

  • 600 g apples / 4 big apples (I always use sweet apples like Golden Delicious)
  • juice of ½ a lemon
  • 100 g pinoli, almonds or other nuts chopped
  • ½ tbsp cinnamon
  • 2 tbsp brown rum alternatively apple juice
  • 40 g raisins
  • 30 g bread crumbs

Instructions

Shortcrust

  • Mix all the ingredients for the dough together and start kneading. At first, the dough doesn't seem to bind at all, but after 5 minutes, a soft dough forms. If it still doesn't stick properly, add more cold water and continue kneading.
  • Form the dough into a ball and wrap it in cling film. Now it needs to rest in the fridge for at least an hour.

Apple filling

  • In the meantime, prepare the filling: peel, core and quarter the apples. Take a quarter and divide it again lengthwise, then you can cut thin leaves from it. Put all the apple pieces in a bowl and immediately add the lemon juice so they don't turn brown. Then mix all the other ingredients into the filling.
  • If you used acidic apples, try the filling and decide if you want to add some sugar. If you used very juicy apples, add a little more breadcrumbs to the filling.
  • Place a baking paper on your worktop and flour it well. After the cooling time, remove the dough from the foil and place it on the paper. Roll out the dough into a rectangle measuring 45 x 30 cm. If the dough sticks to the baking paper, sprinkle some flour over it.
  • Preheat the oven to 180 degrees Celsius or 356 degrees Fahrenheit.

Assemble

  • Turn the dough rectangle in front of you so that the short sides are on the side from your point of view and the long sides of the rectangle are up and down. Fill the dough in the middle with the apple filling and leave free space on all sides (at least 8 cm). Now fold the dough from the right and left side into the middle. Then take the bottom dough and flip it in the middle by helping yourself with the baking paper. Then you can also fold the top dough in the middle using the baking paper.
  • Slightly press the dough at all ends together so that there are no more holes. If you have some dough left, you can decorate the strudelnwith it. For a golden yellow color, mix 1 tbsp of vegan milk with 1 tbsp of powdered sugar and coat the dough with it.
  • Bake the strudel in the oven for 40 minutes. Let the apple strudel cool down a bit and enjoy it warm (preferably with a creamy vanilla sauce).
