Pulled Jackfruit Burger with BBQ Sauce

Vegan pulled pork…sounds pretty unrealistic. But that’s where jackfruit comes in. This fruit has the same texture as tender, fibrous meat and thanks to all the spices and the smoky barbecue sauce, it tastes wonderfully hearty and aromatic.

And the best part? The recipe is very simple, suitable for beginners of the vegan kitchen and prepared in only 20 minutes. Fill the pulled jackfruit into your favorite burger bun (store bought or homemade burger buns) and garnish with fresh veggies – a burger fan’s dream!

What is jackfruit?

As the name already says, jackfruit is a fruit. It is grown in Asia and when the fruit is ripe, it tastes sweet like a mixture of pineapple and banana. The large trees of the fruit grow wild between mango and banana trees. The jackfruits grow directly on the tree trunk and can weigh 40kg.

If you pick the unripe, young fruits, they have a subtle, fruity taste and can be seasoned as desired. The fibrous texture is perfect as a substitute for long cooked, tender and soft meat. Jackfruit is very healthy and can be used in many ways, for example for goulash, the filling of wraps and burgers or even as a meatball and in curry.

Where you can find jackfruit:

You can find the young, unripe fruit needed for this recipe in organic stores or very well-stocked supermarkets. It is cut into pieces and sold in jars or cans. If you can’t find jackfruit in your hometown, it’s probably easiest to order it online.

Homemade BBQ sauce

Making your own smoky and spicy BBQ sauce is very easy and you only need a few ingredients:

  • Ketchup as a base for the sauce
  • Soy sauce for the tangy and salty flavour
  • Siracha sauce or Tabasco for the spiciness
  • Rice or agave syrup for sweetening to balance out the flavours
  • Salt and pepper as desired
  • Tomato paste for the savoury flavour
  • And if you can find: liquid smoke for an extra smoky flavour (not necessary)

Pulled Pork Burger with BBQ Sauce

Ingredients

Pulled Jackfruit

  • 180 g jackfruit from the glass or a can
  • ½ onion
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 tsp paprika powder
  • ½ tsp ground cumin
  • 100 ml fruit juice such as apple or pineapple juice
  • salt and pepper

BBQ Sauce

  • 4 tbsp ketchup
  • 2 tbsp soy sauce
  • 2 tbsp rice, maple or agave sirup
  • ½ tbsp tomato paste
  • ½ tsp siracha sauce or some drops tabasco

For the burger

  • 4 burger buns
  • 2 pickles
  • 1 big tomato
  • ¼ red onion or some red cabbage
  • 4 leafes green salad
  • ketchup and vegan mayo as desired

Instructions

  • Mix all the ingredients for the BBQ sauce well in a bowl.
  • Remove the jackfruit from the glass and dry it with a cloth. Finely chop the onion and garlic.
  • Heat the olive oil in a pan and lightly fry the onion and garlic for 3 minutes. Then add the spices, the jackfruit pieces and the fruit juice and let it fry a few minutes. Torn the jackfruit with two forks and pull the it apart. Add the BBQ sauce and 100 ml of water to the pan, mix well and let it simmer for 15-20 minutes, stirring occasionally.
  • For the burger, cut the bought or homemade burger buns in half and fry the inside in a frying pan without fat until crispy. Cut the pickles, tomato and red onion into thin slices and wash the lettuce.
  • Fill the burger buns with the pulled jackfruit with BBQ sauce, the remaining fillings and, if you like, with ketchup or vegan mayonnaise.
