Asparagus Tart with puff pastry (vegan)

Puff pastry, pizza dough or shortcrust pastry?
A tart can be made from several doughs. These doughs differ not only in taste, but also in preparation. To make it quick, you can buy and use a premade puff pastry or pizza dough. You can also prepare the dough yourself:
Puff pastry: comes from the French cuisine and consists of a dough and a butter part. The dough is folded so often that 144 layers are formed, which then separate themselves during baking. The dough is very tasty and slightly crunchy. The puff pastry that you can buy in the supermarket is vegan most times, as there is no butter, but vegetable fats used.
Shortcrust pastry: This dough is kneaded during preparation and is soft and delicate after baking. Shortcake is often used in the sweet kitchen and baking cookies, as in this vegan apple strudel. For salty foods, use a shortcrust pastry without sugar.
Pizza dough: is super soft and fluffy and crispy at the same time. The traditional Italian pizza dough consists of flour, water, olive oil, salt and yeast. You can easily make your own pizza dough or buy it premade. With this dough the asparagus tart turns ito an asparagus pizza with white sauce. In this photo I used pizza dough and it tasted great:
Spring vegetable asparagus
Asparagus is the absolute star of spring. This plants were already a luxury product for the kings many years ago. White asparagus grows in the soil and is ’picked’ when harvested, while green asparagus grows directly in sunlight.
Asparagus is considered a very healthy food: consists of 93% water, but at the same time it contains many vitamins and minerals such as vitamin C. This vegetable is perfect for a light meal to start spring vital and fit.
How to peel a asparagus?
Asparagus is a very delicate vegetable, so you have to be careful when peeling, to not breakit : best by placing the asparagus on an upside-up pot and then peeling it carefully. The lower ends of the asparagus are cut off as they are very woody and tough. The white asparagus is peeled just from below the tip of the asparagus to remove the sticky threads. Green asparagus, however, only needs to be peeled at the lower third.
Step-by-step guide:
The asparagus tart is very simple and requires only a few ingredients and steps. So that you can’t go wrong, here is a step-by-step guide with pictures. You will find the complete recipe with the exact ingredients and quantities below.
Prepare all the ingredients first: the peeled green and white asparagus, the vegan béchamel sauce, the puff pastry and the vegan cheese. The puff pastry is rolled out and placed on the baking sheet, the edges are rolled over once.
Use a kitchen palette to spread the vegan béchamel sauce evenly on the puff dough. The up-sided edges of the dough ensure that nothing runs out.
Now put alternately a green and a white asparagus on the tart. The asparagus should be about the length of the tart and fit perfectly. Leave 2 cm between the asparagus.
If you have vegan cheese at home, grate it and spread the grated cheese on the tart. This results in a slight crust when baking in the oven.
How long does the asparagus tart stay fresh?
Store the asparagus tart in an airtight container in the fridge. Like that it can be kept for up to 4 days, but it will be definitely eaten before. However, the lemon zest should be rubbed on the tart just before serving, so it tastes pleasantly fresh.

Asparagus Tart with puff pastry (vegan)
Ingredients
- 12 asparagus (best 6 white and 6 green asparagus)
- 1 roll/package premade puff pastryn (vegan) in rectangle shape or shortcrust pastry or pizza dough
- 30 g vegan grated cheese
- lemon zest
Bechamel sauce:
- 500 ml vegan plant milk unsweetened
- 1 bay leaf
- salt, pepper, nutmeg
- 60 g flour
- 30 g vegan margarine or butter
Instructions
- Preheat the oven to 175 degrees Celsius or 340 degrees Fahrenheit.
- Roll out the puff pastry and place it with a baking paper on a baking sheet. Overlap the edges once to the inside of the rectangle.
- The lower ends of the asparagus (about 2 cm) are cut away because they are very woody and tough. Then peel the asparagus carefully (it can break easily): place the asparagus on an upside down pot and peel it gently while it is lying there. The white asparagus is peeled just from below the tip of the asparagus downwards, the green asparagus only needs to be peeles on the lower third.
- Prepare the béchamel sauce: heat the milk in a saucepan with salt, pepper, bay leaf and nutmeg. Melt the margarine in another pot, then add the flour to that pot. Simmer constantly with the whisk and pour the hot milk into the margarine flour mixture after 3 minutes. Let it simmer slightly for 5 minutes while stirring.
- Use a kitche palette to spread the vegan béchamel sauce evenly on the puff pastry. The up-sided edges of the dough ensure that nothing runs out.
- Now put alternately a green and a white asparagus on the tart. Leave 2 cm free between the asparagus. Scatter the vegan cheese over the tart.
- Bake the vegan asparagus tart in the oven for 30-35 minutes and enjoy it best with some freshly grated lemon zest.
