Orecchiette with vegetable pesto

Orecchiette with vegetables pesto

Simple, creamy pesto made from Mediterranean vegetables with pasta and fresh marjoram – a piece of Italy on your plate. A quickly prepared recipe.

I love pesto. And I could eat it every day with many different foods. The tangy flavour and freshness of the pesto simply makes every dish even more aromatic! And in addition, pesto is healthy: lots of leafy greens or herbs, healthy fats from the nuts and olive oil, and all just fresh ingredients. That’s why I love trying out lots of new pesto creations and experimenting with them. And what’s a better way than to hide fresh veggies packed with vitamins in a creamy, flavorful pesto!

The Mediterranean vegetables, freshly pressed olive oil, the scent of fresh marjoram and sunflower seeds are reminiscent of warm days in Italy. And to go with it: the ‘orecchiette’ shaped pasta, which comes from Puglia in the south of Italy and is still handmade there nowadays according to tradition. Perfect for an Easter dinner on warm days.

Lentils are not only super healthy, saturating and high in protein, but they also work very well as a vegan meat substitute. The vegan meat substitute consists mainly of chickpeas, which are fried in a pan until crispy and then lightly mashed. Roasted almonds are added for crunch, soy sauce and herbs for seasoning, and rolled oats to bind the mixture.

The roast is also topped with a simple homemade 4-ingredient barbecue sauce at the end and finished in the oven. The sauce wraps around the mixture and provides a slight spiciness & sweetness: an indescribable taste experience.
