Vegan No-bake Sweet Potato Brownies

Chocolatey, creamy, dense brownies without baking. With protein, healthy and vegan made of sweet potatoes with a cocoa topping- quick & easy to prepare in just 20 minutes.

This recipe is:

In addition, you can make them without special kitchen utensils such as a blender, an oven or even a baking dish. So no matter how small and unfurnished your kitchen is, these brownies can definitely be made there! As proof to that, I can tell you that I even made the no bake chocolate slices in my van with small kitchen! But more on that later. . .

Sweet potatoes in a brownie?

As the name already explains, sweet potatoes taste sweeter than the regular potato. So it’s actually a good idea to use them not only in a salty side dish, but also in desserts and cakes. The best cuisine is often the one that prepares and presents high-quality ingredients in extraordinary combinations (you usually find special combinations in star restaurants).

And together with chocolate powder, the boiled sweet potato is a healthy alternative to other ingredients that are usually used in brownies.

A few natural ingredients:

The sweet potato is the highlight of the brownie. It is boiled or baked and then mashed with a spoon to make it a puree. All you have to do is mix the other ingredients into that puree and your healthy snack is ready!

Coconut puree or alternatively coconut oil provides the light creaminess in the brownie. You can find it in most organic shops.

For sweeteners, you can use agave syrup, for example, but all other natural sweeteners will work as well. I also tried the recipe with liquid stevia.

The cocoa powder provides the chocolatey taste. Best use high-quality cocoa powder that is unsweetened.

The last ingredient is vegan protein powder, that makes the brownies rich in protein. Use your favorite one, but the taste should work well with the brownie, like vanilla or chocolate. If you don’t have protein powder at home or don’t want to use it, just replace it with oatmeal flour (grind oatmeal into flour in a blender) or coconut flour.

Add-ins and toppings:

You can also use the healthy brownie recipe as a base and add or mix your own toppings in. Here some ideas:

  • nuts like cashews, almonds or hazelnuts
  • salted peanuts or peanut butter
  • whole pieces of chocolate
  • dried fruits such as strawberries or raspberries
  • cocoa powder
  • caramel sauce as a topping
  • vegan yoghurt as a topping
  • vegan ice cream to serve

Brownies made in a van

Since recently I travel in a van through Europe and live in a small space with a simple, small kitchen. Nevertheless, I don’t want to give up on delicious and healthy food – and I don’t have to. Because there are many simple recipes that can be prepared anywhere, without needing a large kitchen equipment and even without an oven.

These no bake brownies are perfect for such situations because they are easy and quick to prepare and consist of a few ingredients. So there’s no excuse not to try the brownies. ’Cause if I can make them in the van, you can make them, too.

How to store the brownies:

In an airtight container in a cool place or if you want to enjoy them refreshingly cool, just store them in the fridge. The brownies stay fresh for at least 3 days.

Ingredients

  • 2 sweet potatoes
  • 2 tsp coconut oil
  • 1 tbsp maple syrup or another sweetener
  • 2 tbsp cocoa powder unsweetened
  • 4 tbsp vegan protein powder alternatively oat flour or coconut flour

Instructions

  • Peel the sweet potatoes, cut them into small pieces and cook them in enough water until they are completely soft.
  • Pour away the water and mash the sweet potatoes with a wooden spoon until a creamy puree is formed. (Alternatively, you can also mix them in a blender).
  • Add the coconut oil, maple syrup and cocoa powder to the mixture and mix well with a wooden spoon. Finally, add the protein powder spoon by spoon and mix it well underneath to form a thick mass.
  • Squeeze the brownie mass into a shape of your choice and dust it with cocoa powder. Alternatively, you can also form some brownie protein balls out of it and roll them in cocoa powder.
