Because of the cold days at this time of year, the strong spice ginger fits perfectly into the delicious cookies: it warms the body from the inside and gives the cookies a Christmas taste! And don’t worry, since the ginger is combined with chocolate, the strong spiciness becomes lighter: the sweetness of the chocolate and the light spiciness create a perfect harmony of winter feelings!

Ginger Chocolate Cookies

The dough of the cookies consists of a creamy batter, quickly prepared and flavoured with fresh ginger. The soft dough is formed onto the baking tray using a piping bag. You can make a lot of different shapes, I decided to make elegant circles in the form of roses. I simply used a star-shaped nozzle and made a flat circle with it. After a short baking time of 8 minutes the cookies become deliciously soft and inside still slightly creamy & chocolatey.

Orange jam

The orange filling consists of only 3 ingredients: a fresh orange, water and some gelling sugar. These ingredients are brought to a boil and then mashed until creamy. This quick and easy orange jam is the perfect contrast to the chocolatey cookies.

Storage

Of course, the cookies taste most delicious when they’re freshly filled with the orange jam, but you can also fill all of them at the same time and keep them in an airtight container until you eat them.

Ingredients

  • 200 g margarine or vegan butter soft
  • 120 g white sugar
  • 1 package vanilla sugar or aroma
  • 1 tsp orange zest
  • 4 tbsp ground flaxseeds
  • 100 ml water
  • 250 g flour
  • 50 g unsweetened cocoa powder
  • 70 ml plantbased milk
  • 20 g agave or rice syrup
  • 40 g fresh ginger
  • 100 ml water
  • 1 orange
  • 1 tbsp gelling sugar

Instructions

  • Make the flax eggs: mix flaxseed with the water and let it rest for 10 minutes.
  • Preheat the oven to 180 degrees Celcius or 356 degrees Fahrenheit.
  • Wisk the soft vegan butter, sugar, vanilla sugar and orange zest to a creamy mass. Little by little add the flax eggs.
  • Rub the fresh ginger into little pieces, cook it for 5 minutes with 50 ml water and then mix it with a mixer.
  • Mix flour and cocoa powder and fold it carefully into the butter mass.
  • Add vegan milk, agave syrup and ginger puree to the mass and fill it all into a piping bag. Form different cookies with a star-shaped noozle on a backing tray with a baking sheet. Bake the cookies in the oven for 8 minutes and then let them cool.
  • For the orange filling cut the orange into little pieces and cook it slowly for 10 minutes together with 50 ml water and a tbsp gelling sugar. Then mix it in a mixer until it becomes a creamy jam.
  • Fill the cold cookies with the orange jam and store them in an airthight container.
