Autumn Salad with figs, walnuts and crispy chickpeas
Quick and healthy salad with crunchy greens, fresh figs and crispy fried chickpeas!
Servings: 2 people
Ingredients
- 1 tbsp olive oil extra virgin
- 100 g chickpeas canned
- ½ tsp paprika powder
- pepper, salt
- ½ head of lettuce
- 4 figs
- ½ fennel
- ½ red onion
- 1 tbsp thick balsamic vinegar or the regular one
- walnuts to garnish
dressing:
- 2 tbsp olive oil extra virgin
- 1 tsp agave or maple sirup
- salt, pepper
Instructions
- Fry the chickpeas in a pan with 1 tbsp olive oil, salt, pepper and paprika powder for 5-10 minutes, to make them crispy.
- In the meantime, wash the lettuce and cut it into pieces, cut fennel and red onion into slices. Cut the figs into eight slices.
- For the dressing mix 2 tbsp olive oil, 1 tbsp salt, pepper and agave syrup.
- Mix the lettuce with fennel, chickpeas, onion and figs and combine with the dressing. Garnish with walnuts and top it with some thick balsamic vinegar.
