Vegan Pasta with creamy Mushroom Sauce

Creamy sauce with delicious mushrooms and pasta - simple, quick and vegan recipe for soul food that everyone will love!

Ingredients

  • 250-300 g vegan pasta like spaghetti, fettucini or tagliatelle
  • 2 tbsp olive oil
  • ½ onion
  • 2 garlic cloves
  • 300 g mushrooms
  • 100 ml vegan white wine
  • 200 ml vegan cream like oat or soy cream
  • salt and pepper
  • fresh parsley chopped
  • lemon zest to serve

Instructions

  • Cook the pasta in salt water as long as indicated on the package.
  • Chop the onion and garlic finely and cut the mushrooms as you like.
  • Fry the onion and garlic with olive oil in a frying pan for a short time, then add the mushrooms. Sautée the mushrooms for 5 minutes to brown them. Add the white wine, then the vegan cream and 200 ml of the salt water in which the pasta cooked. Let the sauce boil briefly to make it a little thicker. Season to taste with salt and pepper.
  • Separate the pasta from the cooking water and add them to the sauce. Combine everything thoroughly.
  • Serve the pasta in mushroom sauce with fresh parsley, pepper and lemon zest.
