Autumn Salad with figs, walnuts and crispy chickpeas
Quick and healthy salad with crunchy greens, fresh figs and crispy fried chickpeas!

- 1 tbsp olive oil extra virgin
- 100 g chickpeas canned
- ½ tsp paprika powder
- pepper, salt
- ½ head of lettuce
- 4 figs
- ½ fennel
- ½ red onion
- 1 tbsp thick balsamic vinegar or the regular one
- walnuts to garnish
dressing:
- 2 tbsp olive oil extra virgin
- 1 tsp agave or maple sirup
- salt, pepper
Fry the chickpeas in a pan with 1 tbsp olive oil, salt, pepper and paprika powder for 5-10 minutes, to make them crispy.
In the meantime, wash the lettuce and cut it into pieces, cut fennel and red onion into slices. Cut the figs into eight slices.
For the dressing mix 2 tbsp olive oil, 1 tbsp salt, pepper and agave syrup.
Mix the lettuce with fennel, chickpeas, onion and figs and combine with the dressing. Garnish with walnuts and top it with some thick balsamic vinegar.
