Vegan No-Bake Sweet Potato Brownies

Ingredients

  • 2 sweet potatoes
  • 2 tsp coconut oil
  • 1 tbsp maple syrup or another sweetener
  • 2 tbsp cocoa powder unsweetened
  • 4 tbsp vegan protein powder alternatively oat flour or coconut flour

Instructions

  • Peel the sweet potatoes, cut them into small pieces and cook them in enough water until they are completely soft.
  • Pour away the water and mash the sweet potatoes with a wooden spoon until a creamy puree is formed. (Alternatively, you can also mix them in a blender).
  • Add the coconut oil, maple syrup and cocoa powder to the mixture and mix well with a wooden spoon. Finally, add the protein powder spoon by spoon and mix it well underneath to form a thick mass.
  • Squeeze the brownie mass into a shape of your choice and dust it with cocoa powder. Alternatively, you can also form some brownie protein balls out of it and roll them in cocoa powder.
